Recently, this thing I did for the Food Network about granola aired again. A billion people (actually 5,000) came to Mr B looking for granola recipes. Considering that it's Earth Day season, I thought we'd just roll(ed oats) with it. So this Spring, let's be like our friend, the hippy, and make a big batch of granola. Compare the taste and cost to boxed cereals. I think you'll groove on it.

Recipe Of The Month:     Jim's Super Granola

This is a recipe we featured on the Food Network's "Secret Life of... Cereal". It's an amalgamation of the best granola recipes on Mr Breakfast. The recipe's name is a nod to the program's host Jim O'Connor. This recipe makes about 3 cups or 6 servings or granola.

Jims Super GranolaJim's Super Granola

  • 1/4 cup shredded coconut
  • 1/3 cup honey
  • 1/2 stick (1/4 cup) butter
  • 2 cups old-fashioned oats
  • 1/3 cup popcorn - finely ground
  • 1/8 cup wheat germ
  • 2 teaspoons sunflower seeds
  • 2 teaspoons sesame seeds
  • 1/8 teaspoon ground cinnamon
  • 1 pinch of freshly grated nutmeg
  • 1/3 cup peanut butter
  • 1/2 cup raisins or other dried fruit

  • Preheat oven to 300 degrees.

    Toast coconut on parchment for about 6 minutes until lightly toasted. Allow coconut to cool to room temperature.

    In a small sauce pan over low heat, stir butter and honey until butter is melted and well combined.

    In a large mixing bowl, combine oats, popcorn wheat germ, sunflower and sesame seeds, cinnamon and nutmeg.

    Add honey-butter and peanut butter to the oat mixture and stir until well combined.

    Squeeze together a few chunks to create oat clusters.

    Cook for 20 to 25 minutes - stirring every 5 minutes.

    Remove from oven. Add dried fruit, stir and allow to cool.

    Serve with milk and fresh fruit. Stores well in a sealed container for two weeks.
